Thank you, Ching-Hua. I am feeling better today, though there's still room for improvement. This was totally my own fault, as usual. I either didn't realize or had forgotten that some cheeses do not have their own, good bacterial cultures, which would prevent bad cultures from developing in them if you were to leave them out of the fridge. I guess I was spoiled by being previously able to afford high-quality cheeses that spoil much less easily. Anyway, clearly, the fridge is an awesome piece of kitchen equipment and should be used.
:) I put all the cheese from thanksgiving in the fridge. just in case.
