I humbly suggest the following scheme for reducing the stress experienced by the organizing adults next time. At the very beginning of the camp, split all the kids into two groups of equal size: younger (or less experienced) ones and older (or more experienced) ones. Pair up each kid in the former group with a kid from the latter group for the duration of the camp, so that the more experienced / older kid in each pair helps coach and keep track of the less experienced / younger one. Structure the camp so that these pairs can easily stay together much of the time. This might work.
