that much soy sauce would last me 5 years and i use it almost every day. Btw, that was a nice bike ride description a few days back about the joys of nature early in the morning.

Well I have a liberal hand when it comes to adding Kikkoman. Great for marinades, flavor enhancer for soups, sauces, stir-frys. I also keep fresh ginger, garlic and cream sherry at hand for complementing the soy sauce. Kind of a teriyaki flavor.

My other flavor enhancer is Brewer's Yeast, which I buy by the pound at the Whole Foods bulk section. Great on any starch or vegetable.

thanks for the tips, I went through a time when i used the yeast and liked it - forgot what i put it on though. I've never seen organic kikkoman around here, much less gallon sizes. All I can get is San-J. But a gallon would put too serious of a hurt on my mini-fridge, and it says refrigeration is 'recommended' (not sure why, seems like there is enough salt in it to keep it from spoiling)

Well the gallon of Kikkoman now comes in a plastic bottle with a pour spout. So I hope it will keep unrefrigerated. I don't have room either!

And my mother was a nutrition freak back in the 1940's when she first read Adelle Davis' book Let's Cook it Right when we lived near her in the Bay Area. She was a local celeb long before she attained national attention. So I've been enjoying soy products and brewer's yeast, etc for a long, long time!
