Hmmm, would it work on an iPad, I wonder?

What app is this? Is it called Control - For Orienteers and does it cost ~ $3.99 on the app store? It sure does look like QuickRoute. (Then it's just a matter of where to store the map.)

You have correctly identified the app.

I have not tried the app on my iPad. Dragging the draggable icon around would certainly be more precise on the larger screen. But the Apple Watch is in a symbiotic relationship with the iPhone (I have the noncelluar type), which does not have to be with you on the course. Does the Apple Watch link to an iIPad? Doubt it. If it were not tax time (oh, the brain damage), I'd try it for you.

The app provides for exporting the GPS track so you can use Quick Route if you so desire.

I have been corresponding with the app developer in Findland, and he has been grateful for my observations and using them in upgrades. I find it to be much more goof proof than the buttons on my Garmin watch.
