After treating my car like an unexploded ordnance for months, I would really like to see some shiny new screws or an empty box from the new air bag or *something* when I get the car back.
I had the EXACT SAME THOUGHT with my Legacy a year or two ago. :-\

I had airbags replaced on two different cars a couple of years ago, after putting it off for a long time. It's like getting your air filter changed, nothing to see. When my mother had hers changed, they apparently forgot to check off some step, and they called her when she got home and asked to not drive it, and immediately dispatched a guy to come over and look at it and ascertain that it was in fact done correctly.
Fortunate timing for me - I got the notice that it was ready for the airbag replacement to be done on a Friday night, when I already had it booked in for a major 6-monthly service on the Monday morning.
Scheduling delays are typically the result of availability of replacement airbags. The number of vehicles recalled is enormous.
In Ontario (maybe all of Canada?), the replacement air bag is ordered by VIN. And they won't order your replacement air bag until you've received the letter telling you it's time to make an appointment. I received a letter warning me not to carry a front seat passenger about 10 weeks before that.
