Some numbers chief!! Very impressive. Those races are solid! Basically describes exactly what it was like for me too - lacking a burst of power but able to sustain a good threshold pace (except I was at 4.3 not 5 w/kg)!!!

Let's be honest, you're not training to be a sprint cyclist. You could do plenty of sprint training to give you those 1min power bursts, but it would be detrimental to running specificity. Be happy that you can hold your own in a sport which isn't your primary focus, it's all good training at the end of the day (and I ain't racing you on Zwift, your w/kg are disgusting!)
Don't want to be a sprinter, but also being shat out the back on the Harrogate circuit on the first lap is also not ideal!!!
get yerself a big 5 min power, repeatable high 1 min power and get in the mix for an e-racing contract. should be easy ;)
