The time is not bad considering the weekend and travelling you've had to do. Anyway - it's well beatable and in February you'll be smiling big time when you take 20 odd seconds off it.

Training-wise. It's not sensible to step up your training so much and so quickly, as you are planning. How closely are you talking to Sarah? How relevant is each session you are doing and how much recovery/repairing is your body able to get between sessions? Be sensible or you will break down big time. Same thing with the eating - it doesn't matter if your veggie or carnivore aslong as you are being sensible - output can only be as good as your input........
