It's cold and rainy (snowing in the mountains), therefore I'm lazy and unmotivated.
I spent the whole day on long-overdue house chores. I finally got the last of the Laramie Daze / US Championship detritus out of my living room.

I've found the perfect one-item dinner. It doesn't mind getting squeezed into my backpack, it's reasonably tasty, and there are enough leftovers for lunch the next day: Bertolli Spinach & Ricotta Cheese Manicotti.
