Upon tasting a wine I said I could imagine poaching a pear in it, w a touch of black pepper & vanilla - was told this wine was not "appropriate" for poaching - also noticed someone else being informed that another wine was not "appropriate" for incorporating into a sangria.
Now, ladies and gentlemen...
(1) really, from a biologist's point of view that stuff is Exhausted Yeast Growth Medium, & by that I mean that the wee yeasts shat in it so much that they died of it. Really. Keep that in mind.
(2) from a plant biochemist's point of view, yes there are some fascinating combinations of aromatic esters & so on, by all means let us ingest & appreciate them in our Varying & Respectful ways...
(3) and, OK, if a bottle of exhausted yeast growth medium got up to, say, $400 or so in the odd venue of human valuation, I probably WOULD gather my friends and say, here, we shan't poach anything in this at least at first, let us taste this from all angles & try & figure out what collection of esters has been so highly envalued by our society. ("envalued", it's a word. I just typed it...)
