Does anyone know if its possible to cut a hole in an OCAD map, removing everything inside, but not, e.g. continuations of contour lines outside the hole?

Check this site, there are different options to do what you want:

Usually it's done not cutting out but overlaying with a white object. Optically the same effect with what you want.

  1. Make a shape bigger than the entire map, in some random area symbol

  2. Cut a hole in said shape to match the hole you want to cut out. (so you should end up with a shape covering everything *except* what you want to remove)

  3. Extras -> Partial Map, Use Selected Object

One problem with using Partial Map is when you want to cut out a hole following existing features. If you define the cutting shape by ctrl-clicking, for example, a track, then you'll get little bits of the track along the edge of your cut-out map.

One solution is to define your cutting shape, then use Move Parallel to increase the size of the shape a tiny bit to it includes the objects on the boundary. If you're cutting out a hole as graeme wanted, define the inner shape first, use Move Parallel to shift it to the appropriate side, then cut the hole in the outer shape by ctrl-clicking to follow the inner shape.
